This is a very personal case but one of my favorite logos is probably the Carrefour logo. In France, everyone knows it because it must have lulled their childhood. Going shopping with your parents, standing in the cart and looking at this logo in all its forms: signs, packaging, jackets... Thinking about knowing it and finally discovering all its secrets much later: the arrows which indicate the past on the left and the future on the right, the colors of its country of design and finally, the biggest of all, the "C" which is is revealed in negative space. I went from dreaming of buying knights to buying baby diapers but I never got tired of this logo.
One of my favorite logos of all time is OneFootball by DesignStudio. It's dead simple, scalable, on brand, so smart and yet so well crafted right down to the line weight, angles and balance. It's the kind of logo design I wish I created! https://www.design.studio/work/onefootball
